Recipe: stuffed eggplant or peppers
This is one of my favorite recipes, because it was the first i learned to make. I like it because it’s very easy to do and has many variations.
Ingredients:
- 2-3 peppers or eggplant.
- 300 g ground beef or ground chicken.
- ½ onion.
- Garlic.
- English sauce.
- Oregano.
- Flavor God.
- Caper.
- 2 tbsp of tomato paste.
- Salt.
- Grated mozzarella cheese.
- Grated parmesan cheese.
Preparation:
1. Chop the eggplant in half and remove the stuffing from it and leave it in a separate bowl.
2. Prepare the protein part first by suffering the seasonings, add the meat and wait until all the flavors are integrated, this gonna take about 5 minutes. Add ¾ cup of water and boil until it takes an homogeneous pasty consistency. Reserve and add with the filling of the eggplant.
3. Prepare a tray and place the paprika without the top and eggplant in the shape of a canoe. Stuff it with the prepared stew and in the top 1 tsp that Parmesan cheese and 2 tbs of mozzarella cheese.
4. Take it to the oven for 30 min to 250 C.
